Kashmiri Dum Aloo Banane ki Recipe:
Kashmiri Dum Aloo banane ke liye sabse pahle aloo chheelkar dho len. Ab kante se sabut aloo men gahre chhed kar len.
Ab kadai men 4 bade chammach tel dalkar garam karen. Tel garam hone par usmen aloo daalen aur halka brown hone tak tal len.
Iske baad pyaz, hari mirch, adrak, lahsun ko mixer men daal kar barik pees kar pest bana len. Iske baad tamatar ko bhi pees kar uska pest bana len.
Ab kadai ke bache hue tel men aur tel daal kar garam karen. Tel garam hone par usmen heeng, jeera daalkar ek minute tak bhoon len. Iske baad pyaz, lahsun, tamatar ka pest dalkar use sunhara hone tak bhoon len.
Iske baad ismen lal mirch powder, haldi powder, dhaniyan powder dalkar 1 minute tak bhunen. Iske baad tamatar ka pest aur malai ko dalen aur bhun lnen.
Jab masale tel chhodne lage, ismen dahi daal den aur 1 minute tak chalayen. Iske baad tale hue alooo ko bhee masale men daal den aur achchhi tarah se chala len.
Ab aap gravy ko jitna patla/gadha rakhna chahen, uske hisab se pani dalen aur medium aanch par 7-8 minute tak dhak kar pakayen. Iske baad dhakkan khol kar dekh len.
Agar aloo pak gaye hon (agar aloo na pake hon, to 1-2 minute aur paka len) to gais band kar den aur usmen garam masalaa mila den.
Ab aapka Dum Aloo taiyar hai. Bas ismen kati hui hari dhaniya daalkar garnish karen aur Roti, Parathe, Puri ya Chawal ke saath serve karen.
