Zaruri Saman (Ingredients):
Kanji ke liye-
Lal mirch powder_Chilli powder - 1/2 chhota chammach,
Pisi rai_Mustard seed powder - 02 bade chammach,
Haldi powder_Turmeric powder - 01 chhota chammach,
Heeng_Asafetida - 02 chutki,
Pani_Water - 02 litar,
Kala namak_Black salt - 1/2 chhota chammach,
Namak_Salt - test ke mutabik.
Vadon ke liye-
Moong dal -100 gram,
Namak_Salt - 1/4 chhota chammach,
Tel_Oil - talne ke liye.
Kanji Vada Banane ki Recipe:
Kanji Vada banane ke liye sabse pahle moong dal ko saaf karke dho len aur 4 ghante ke liye pani men bhigo den. Bhigne ke baad dal ko grinder men pees len. Iske baad use kisi bade bartan men lekar achchhi tarah fent len.
Fentne ke baad dal ki ek chhoti si goli (pitthi) pani men dalen. Agar ye pani ke upar tairti rahe, to thik, aur agar neeche chali jati hai, to iska matlab abhi ise aur fentne ki zarurat hai.
Pitthi taiyar hone ke baad kadai men tel garam karen. Tel garam hone par usmen ek bade chammach ke barabar daal ki pitthi dalen aur sunahra hone tak talen. Talne ke bad vadon ko kitchen paper par nikal kar rakhen.
Jab sare vade ban jayen, to ek bartan men garam pani lekar usmen ek chhota chammach namak mila den aur fir usmen tale hue vade dal den. 5 minute men vade achchhi tarah se bheeg jayenge. Iske baad unhen halke hath se daba kar pani nikal den aur alag rakh den.
Kanji banane ki recipe:
Ek bade bowl men haldi, lal mirch, pisi rai, heeng, kala namak aur namak lekar usmen 1/2 bowul pani dalen aur sari chizon ko achchhi tarah se mila len. Ab ismen 2 liter pani mila len aur usmen vade dal kar kar achchhi tarah se chala len.
Ab vadon ko kisi garm jagah par 2 dinon ke liye rakh den. Garm mausam men ismen 2 din men ek sondhi si khatas aa jayegi. Pani men dale gaye masale niche ki or baith jate hain, isliye din men 1-2 bar ise chala den, jisse kanji achchhi tarah se taiyar ho jaye.
2 din baad aapke Kanji Vade taiyar ho jayenge. Vaise agar mausam men thandak ho, to inhen taiyar hone men zyada vaqt lag sakta hai. Aur haan, jab Kanji ka pani aapke mutabik khatta ho jaye, to usko fridge men rakh den aur 7 dinon tak istemal karen.
