Easy Besan Kachori Recipe in Roman English/Urdu
Kachori aamtaur se kisi khaas mauke (tyauhar, party wagairah) pe banai jati hai. Ye badon ke saath-saath bachchon ko bhi pasand aati hai. Isi baat ko dhyan men rakhte hue aaj hum aapke liye Besan Kachori Recipe lekar hazir hue hain. Ummid hai Besan Kachori aapko pasand aayegi.

Zaruri Saman (Ingredients):
Maida (Flour) - 02 cup,
Ghee/Tel (Oil) - 1/4 cup,
Namak (Salt) - zarurat ke mutabik.
Bharaavan (stuffing) ke liye:
Besan (Gram flour) - 1/2 cup,
Hari mirch (Green chilli) - 02 (Barik kati hui),
Adrak pest (Ginger paste) - 1/2 chhota chammach,
Saunf (Fennel) - 01 chhota chammach (kuti hui),
Jeera (Cumin) - 1/2 chhota chammach,
Heeng (Asafetida) - 01 chutki,
Garam masala - 1/2 chhota chammach,
Amchur powder (Dry mango powder) - 1/2 chhota chammach,
Dhaniya powder (Coriander powder) - 1/2 chhota chammach,
Lal mirch (Chilli powder) - 1/4 chhota chammach,
Tel (oil) - kachori talne ke liye,
Namak (Salt) - zarurat ke mutabik.
Besan Kachori Banane ki Recipe:
Besan kachori banana ke liye sabse pahle maida ko ek bartan men nikal len. Fir usmen pighla huaa ghee aur namak dal den. Uske baad use pani ki madad se mulayam gunth len. Uske baad aate ko gile kapde se dhak kar 20 minute ke liye rakh den.
Ab ek kadai men do bade chammach tel dal kar garam karen. Tel garam hone par usmen jeera aur heeng daal kar bhoon len. Fir kadai men adrak pesṭ, hari mirch, lal mirch aur baki masale dalen aur chala kar bhun len.
Masale bhun jane ke baad usmen besan dalen aur use bhi chalate hue bhun len. Ab is mixture men amchur powder aur namak mila den aur besan ki mahak aane tak mixture ko achchhi tarah se bhun len. Bhunne ke baad aapki bharavan (stuffing) taiyar hai. Ise gais se utar len aur thnda hone den.
Ab gunthe hue aate ko lekar uski chhoti-chhoti loi bana len. Loi ko puri ke size ka belen, fir uske beech men ek chhota chammach bharaavan (stuffing) rakhen aur aur fir use charon or se uthakar band kar den. Ab loi ko dono hatheliyon ke beech men rakhen aur daba kar use kachori ke size ka bana len. Kachori ko belen nahin, nahin to wah phat jayegi.
Sari kachori taiyar hone ke bad ek kadai men tel garam Karen. Tel garam hone par aanch kam kar den aur fir usmen kachauriyan dalen. Inhen sunahra hone (lagbhag 10 minute) tak ulat-palat kar tal len aur fir ek alag bartan men nikal len.
Ab aapki khasta Besan Kachori taiyar hain. Inhen garmaa-garam plate men nikalen aur sabzi ya manchahi chutney ke saath serve karen.
Note:
Kachauriyan khari talne ke baad behad khasta ho jati hain, isliye inhen thnda karke air tight bartan men rakh kar 1 week tak istemal kiya ja sakta hai.
