Zaruri Saman (Ingredients):
Chena - 250 gram,
Shakkar (Sugar) - 02 cup,
Doodh (Milk) - 01 liter,
Kaju (Cashew) - 10-12 (barik katre hue),
Pista (Pistachios) - 10-12 (barik katre hue),
Kesar (Saffron) - 10-15 dhage,
Chiraunji (Charoli) - 01 bada chammach,
Hari elaichi (Cardamom) - 3-4 (chhil kar koot len).
Rasmalai Banane ki Recipe:
Rasmalai banane ke liye sabse pahle chena ko kisi bartan men rakhen aur use masal-masal kar mulayam aur chikna kar len. Jab chena achchhi tarah se mulayam ho jaye, tab samajh jayen ki ye Rasmalai banane ke liye poori tarah se taiyar hai.
Ab nimbu ke barabar chena len aur use gol kar len. Iske bad gole ko donon hathon ki hatheliyon ke bich men rakhen aur daba kar chapta kar len. Isi tarah se sare chene ki tikki bana len, fir chashni ki taiyari karen.
Chashni banane ke liye ek bade bartan men (jismen chhene ki sari tikki aa saken) 3 cup pani len aur 1/2 cup shakkar bachakar baki ki poori shakkar pani men dal den aur ubalen. Jab shakkar pani men poori tarah se ghul jaye, usmen chene ki tikki dal den aur fir tej anch men 20 minute tak paka len.
Chhene ubalte samay is bat ka khayal rakhen ki bartan men pani paryapt matra men rahe aur usmen ubal aata rahe. Chena achchhi tarah se pakne par fool kar 2 gune size ki ho jayegi. Tikki pak jane par bartan ko gais se niche utar den aur thanda hone den.
Ab ek bartan men doodh ko garm karen. Jab doodh men ubal aa jaye, ismen bachi hui shakkar, adhe meve, kuti hui elaychi aur kesar dal den. Doodh ko lagatar chalate hue pakayen. Jab doodh aadha rah jaye, gais band kar den.
Isake bad chene ki sabhi tikki chashani se nikal kar doodh men dal den aur thandi hone den. Thandi hone par Rasmalai ko fridge men 1 ghante ke liye rakh den.
