Zaruri Saman (Ingredients):
Dudh (Full cream milk) - 1.5 liter,
Shakkar (Sugar) - 750 gram (4 cup),
Nimbu ka ras/Sirka (Lemon Juice/Vinegar) - 02 bade chammach,
Ararot - 02 chhote chammach.
Chena Rasgulla Banane ki Recipe:
Chhena rasgulla banane ke liye taza aur full cream dudh ko ek bhari tale wale bartan men garam karen. Dudh garam hone par gais band kar den aur use thoda sa thanda hone den. Dudh thanda hone par usmen thoda-thoda karke nimbu ka ras dalen aur dudh ko chalayen. Isse dudh fat jayega aur uska chhena aur pani alag-alag ho jayega.
Ab ek patle suti kapde se dudh ko chhaan len. Kapde men bache huye chhene ko ek baar thnde pani se dho len, jisse usmen se nimbu ka swad nikal jaye. Chhena ko dhone ke baad use kapde se hi gol gathri jaisa banaakar baandh den aur dabaakar usaka pani puri tarah se nikaal den.
Ab chhena ko ek bade bowl men nikaal len aur use masal kar chikna kar len. Iske baad chhena men ararot dalen aur use achchhi tarah se masal kar chikna kar len. Ab hath men thoda sa chhena len aur manachahe aakar ke uske gole bana len.
Sare chhene ke gole banane ke baad inhen gile kapde se dhak den aur chashni taiyar karen. Chashni banane ke liye 2 cup pani men shakkar milakar kisi bade bartan men tej aanch par pani ko garam karen. Jab pani men ubaal aane lage, chashni men chhene ke gole daal den. Iske baad bartan ko dhak den aur 15 minute tak golon ko pakane den.
Lagbhag 7-8 minute ke baad chashni gaadhi hone lagegi. Aise men usme thoda sa pani daal den, jisse chashni patli rahe aur rasagulle achchhi tarah se pak saken. Pakne par rasgulle ful kar do gune size ke ho jayenge. Aise men gais band kar den aur rasagullon ko chashni men 8-9 ghante tak pada rahane den. Isake baad inhen 1 ghante ke liye fridge men rakh den.
Rasgullon ko fridge men rakhte samay is baat ka khayal rakhen ki ye chashni men puri tarah se dube rahne chahiye, tabhi ye meethe aur swadisṭ ban payenge.
Ek ghante ke baad rasgullon ko fridge se nikal len. Ab aapke Spongy Rasgulle puri tarah se taiyar hain. Inhen serving bowl men nikalen aur test karen. Aap chahen to inhen fridge men rakh kar 15 dinon tak istemal kar sakte hain.
Note:-
Chhena se rasgulle banane se pahle ise nichod kar pani ko puri tarah se nikal den. Chhena Rasgulla ko chashni men pakate samay chashni itni patli rahni chahiye, ki usmen ubaal aa sake. Iske liye aap zarurat hone par usmen 2 cup tak pani daal sakte hain.
