Zaruri Saman (Ingredients):
Paneer - 250 gram (patale, lambe kate hue),
Dahi (Curd) - 1/2 cup,
Besan (Gram flour) - 1/4 cup,
Shimla mirch (Capsicum) - 01 adad,
Tamatar (Tomato) - 02 adad,
Pyaz (Onion) - 01 (bade size ka),
Dhaniya patti (Coriander leaf) - 01 bada chammach (barik kati hui),
Makkhan/Ghee (Butter/Ghee) - 01 bada chammach,
Tel (Oil) - 01 bada chammach,
Kali mirch powder (Black pepper powder) - 01 chhota chammach,
Chaat masala - 01 chhota chammach,
Nimbu ka ras (Lemon juice) - 1/2 chhota chammach,
Lal mirch powder (chilli powder) - 1/2 chhota chammach,
Jeera powder (Cumin powder) - 1/2 chhota chammach,
Adrak pest (Ginger pest) - 1/2 chhota chammach,
Hari mirch pest (Green chilli pest) - 1/2 chhota chammach,
Haldi powder (Turmeric powder) - 1/2 chhota chammach,
Namak (Salt) - zarurat ke mutabik.
Paneer Tikka Banane ki Recipe:
Paneer Tikka banane ke liye sabse pahle dahi men besan, kali mirch powder, haldi powder, lal mirch powder, adrak ka pest, hari mirch ka pesṭ, tel aur namak (agar jarurat ho, to thoda sa pani bhi) mila kar fent len. Usake baad dahi ke ghol men paneer ke tukde daal kar unhen mix kar len aur 1/2 ghante ke liye rakh den. 1/2 ghante ke baad dahi ke tukdon ko nikaal kar ek plate men rakhen aur fir unhen 1 ghante ke liye fridge men rakh den.
Ab shimla mirch, tamatar ko dho len. Shimla mirch ko kataar uske beej nikal den aur uske patle aur lambe tukde kaat len. Isi tarah tamatar ko katkar uske beej alag kar den aur baki bache tamatar ke patle aur lambe peace kar len. Pyaz ko bhi chheel kar dho len. Usake bad use 4-6 tukadon men kaat len aur uski 2-2 parton ko alag kar len.
Ab ek non stic pain men makkhan daal kar garam karen. Makkhan men paneer ke tukde daalen aur dhimei aanch par unhen ulat-palat kar golden browun hone tak senk len. Bache hue makkhan men jeera powder dal kar halka sa bhoonen. Fir usmen shimla mirch aur tamatar ke tukde daal kar chalayen aur dhak kar 2 minute pakaa len.
Uske baad pan men tale hue paneer ke tukde, chaat masala aur nimbu ka ras dalen aur ek minutr tak chalayen. Uske baad pan men hari dhaniya chhidak den aur gais band kar den.
