Aam (mango) ke mausam men uske tarah-tarah ke pakwan banaye jate hain. Un pakwanon men Aam ki Launji kafi mashhur hai. Ye Rajasthani recipe hai, jise Kachi Keri Ki Sabzi ke naam se bhi jana jata hai. Ye swad men khatti-meethi hoti hai. Ise kuchh jagah par Aam Ka Galka bhi kahte hain. Aam ki Launji ki khas baat ye hai ki ye 7 se 8 din tak kharab nahin hoti hai. Zaruri Saman (Ingredients):
Kachcha aam (Raw mango) - 02 cup (kate hue),
Gud/Shakkar (Jaggery/Sugar) -05 bade chammach,
Saunf (Fennel) - 1/2 chhota chammach,
Methi dana (Fenugreek seed) - 1/2 chhota chammach,
Haldi powder (Turmeric powder) - 1/2 chhota chammach,
Jeera (Cumin) - 1/2 chhota chammach,
Sarson ka tel (Mustard oil) - 01+1/2 bada chammach,
Hari mirch (Green chilli) - 01 chhota chammach (barik kati hui),
Hari mirch (Green chilli) - 01 chhota chammach (barik kati hui),
Lal mirch powder (Chilli powder) -01 chhota chammach,
Dhaniya ki patti (Coriander leaf) - 01 bada chammach (barik kati hui),
Namak (Salt) - zarurat ke mutabik.
Aam Ki Launji Banane ki Recipe:
Kachche Aam ki Launji / Aam ki Sabji banane ke liye sabse pahle aam ko dhokar use chheel len aur usaki guthliyan nikaal den aur fir use manchaahe size men kaat len. Uske baad aam ke tukdon ko garam pani men 7-8 minute ke liye ubaal len. Ubalne ke baad aam ko 2 baar sade pani se dho len, jisse unka khattapan nikal jaye.
Ab ek kadai men tel garam karen. Tel garam hone par ismen jeera ka tadka lagayen. Fir methi dana aur saunf dalen aur halka sa bhoon kar hari mirch, lal mirch powder, haldi powder, ubla aam aur namak daal den aur achchhi tarah se chalayen. Ab kadai men gud/shakkar dalen aur dhimi aanch par pakayen.
Thodi der men gud/shakkar pighal jayega aur launji se sondhi khushbu aane lagegi. Ab ise tab tak pakayen, jab tak launji gadhi na ho jaaye.
Ab aapki Aam ki Launji taiyar hai. Ab gais band kar den aur upar se kati dhaniya daal kar puri ya paratha ke saath Aam ki Launji ke maze len.
