Easy Malpua Recipe in Roman English/Urdu

Zaruri Saman (Ingredients):
Maida (Flour) - 01 cup,
Mawa/khoya - 01 cup,
Doodh (Milk) - 02 cup,
Deshi ghee - 08 bade chammach,
Saunf (Fennel) - 02 chhote chammach,
Beking soda - 02 chutki.
Chashni ke liye-
Pani (Water) - 04 cup,
Shakkar (Sugar) - 02 cup,
Kesar (Saffron) - 10-12,
Elaichi powder (Cardamom powder) -1/4 chhota chammach.
Rabri ke liye-
Doodh (Milk) -02 cup,
Pista barfi - 15 peace,
Shakkar (Sugar) -04 bade chammach,
Kesar (Saffron) -01 chhota chammach (pani men bheegi hui).
Malpua Banane ki Recipe:
Pahle rabri banaane ke liye doodh ko ubaal len. Ismen maish ki huyi barfi aur shakkar mila den aur chalaate huye pakayen. Jab doodh kaafi gaadha ho jaye, ise aanch se utar kar rakh den aur thnda hone den. Thnda hone par ismen kesar mila den.
Chashni banane ke liye pani, shakkar, elaichi powder aur kesar ko milaakar tej aanch par garam karen. Ise tab tak garam karen, jab tak ek taar ki chaashni na ban jaye. Chashni ban jaane par ise utaar kar rakh den aur thnda hone den.
Malpua banane ke liye ek fry pain men pahle doodh ko gunguna garam kar len. Uske baad kaddukas kiya hua mawa (khoya) milakar use achchhi tarah se fenṭ len. Dhyan rahe is mixture men gaanth na padne paye.
Jab ye achchhi tarah se mil jayen, tab ismen pahle aadha maida mila den aur achchhi tarah se fenṭ len. Uske baad fir aadha maida milayen aur fenten.

Ab mixture men saunf aur beking soda bhi dal den aur ek baar fir mix kar len. (aap chaahen, to iske liye mixer ka bhi istemal kar sakte hain.) Dhyan rahe ye mixture na to zyada patla ho aur na hi zyada gaadha, varna malpue achchhe nahin banenge.
Ab ek non stick pain men deshee ghee daalakar garam karen. Ghee garam hone par malapue ke mixture ka do chammach ghol pain men dalen aur usko golayi men faila den. Pue ko bhoora hone tak talen aur fir nikal kar ek bartan men rakhte jayen.
Sare pue banne ke baad inhen chaashni men do minute ke liye duba den. Uske baad inhen nikaal len aur rabri ke saath pesh karen.
